Green banana biomass is the product obtained from cooking bananas when they are not ripe, that is, the carbohydrate present in this fruit has not yet become starch and is still classified as Resistant Starch (AR). This characteristic is essential to guarantee the beneficial properties of biomass, since the resistant starch works as a fibre of excellent quality, helping in the proper functioning of the intestine.
The consumption of AR is interesting for the reconstitution of the intestinal microbiota, helping both in the recovery of cases of diarrhea and in cases of constipation, as its prebiotic characteristic stimulates the fermentation of food by the microorganisms that normally inhabit the intestine and in this way promote the formation of short-chain fatty acids (AGCC), important mediators of immunity.
RA has the ability to control blood glucose levels and thus prevent and/or assist in the treatment of diabetes. This happens because this fibre slows gastric emptying (the speed with which food passes through the stomach), and in this way, the bolus (derived from the ingested meal) passes through the entire gastrointestinal tract (mainly through the intestine) more slowly and thus falls in the bloodstream also more gradually, not raising blood glucose levels in an exaggerated and harmful way to health.
Biomass milk is rich in B vitamins, vitamin C, and beta-carotene, it also has 25% dietary fibre. It is a source of tryptophan, an amino acid precursor to serotonin (the well-being hormone).
It can be used in various preparations as a milk substitute (vitamins, sauces, porridge, juices, coffee). The reconstitution of powdered milk is done by 2 tablespoons for every 200ml of water.
