Carob is the fruit produced by the carob tree (Ceratonia siliqua). This fruit is contained in a pod and both are used for the production of powdered carob, which is the result of toasting and grinding both parts.
Carob is considered a healthy food with a high nutritional value. It is a source of B complex vitamins (important for the proper functioning of the nervous, muscular, mental system), a source of vitamin A (essential for the health of bones, skin and vision), a source of antioxidants (which fight free radicals, avoiding cellular ageing) and source of fibres (which help maintain good intestinal flora).
This product is a great substitute for cocoa, as they have a very similar flavour and colour. However, the nutritional value is quite different. While cocoa is a source of many fats and is low in carbohydrates, carob is the opposite: it is low in fat and rich in carbohydrates (so it has a sweeter taste). It can be used in various preparations, such as cakes, porridges, mousses, ice cream, chocolate, vitamins and chocolates.
It has an important positive point: it does not have an allergenic or stimulating agent, such as theobromine and caffeine present in cocoa. It is a totally vegan product.
